Here’s a recipe of pyttipanna. This dish takes a bit of work but it’s super easy, yummy and VERY cheap. Hope you’ll like it!
This is what you need for four portions:
- Around 1 kg of root vegetables lite potatoes, beets, carrots … you choose!
- 4 eggs
- Parsley (optional, frozen is fine)
- Salt and pepper
This is how you make it:
Peel and chop your veggies in 1 cm cubes (you can make them bigger but they’ll take longer to cook).
Fry your cubes in butter in a pan (be generous with the butter!). Fry until tender. Salt and pepper and sprinkle some parsley for color and taste if you want to.
Fry the eggs (or poach if you're really fancy).
Done! Serve the pyttipanna with some mustard if you like it. Otherwise yoghurt or crème fraiche works too.
Ps. If you want to have meat with this dish, you can fry slisces of bacon or cubes of another kind of meat. But give the veg version a try!
