
Since we posted stuff on meal prepping earlier this week, we thought we’d share a recipe on a cheap, environment-friendly, quick and tasty dinner. Yup, it’s pasta. But it’s not instant noodles or macaroni, even if the cost per portion is about the same! Here goes.
What you need: Pasta of your choice, a couple of carrots (depending on size and how hungry you are, you might need more), an onion, a jar of crème fraiche/oat fraiche/soy fraiche, salt and pepper.
How to: Boil your pasta. Chop your onion finely and fry it on medium heat until tender. Grate your carrots and add them to the pan. Season with salt and pepper (be generous!). After a couple of minutes, stir in the crème fraiche. Done!
If you want to make your dish a little more filling, add some lentils or beans. And if you’re feeling fancy, try seasoning with smoked paprika. Y-u-m.
